Cooking Chronicles

Stick to Your Ribs Rub (Pork):

We cover the ribs with a binder, sprinkle them with our Stick to Your Ribs Rub, and pat it in. Usually, we put the ribs on our smoker and use the 3-2-1 Method. When the ribs are done, we wrap them in butcher paper and let them rest before cutting. If you like sauce on your ribs, now is the perfect time to sauce and spice them up. When ready, we slice and serve mouth-watering and fall-off-the-bone ribs. We serve the ribs with our special BBQ Sauce on the side.

Taste Explorations

Brisket Bark Rub:

We rub in the binder, pat on the Brisket Bark Rub, and let it rest overnight. We put the brisket on the smoker and let it come to 208 degrees internal temperature, which takes about 12 to 14 hours. Then we wrap it in butcher paper and let it rest so that the juices get reabsorbed into the meat. Letting it rest in its own gravy is important. Then the brisket is ready for you to slice, serve and enjoy the great experience of melt-in-your-mouth brisket.

Spice Tales

Smokin' & Grillin' Bark All Purpose:

This is a great rub for large cuts of beef. Steamship Roast, hind quarters, bottom rounds, and even sides of beef. We apply a binder and then pat on the Smokin' & Grillin' Bark All Purpose Rub. Most big cuts of beef are cooked on a rotisserie or a Cajun Microwave.  We  like to pull the meat around 140 degrees, wrap it up and let sit for a while. Then depending on what you have cooked, cut and serve for the appropriate dish. This is when we say "Come pass a good time with us, Cher."

Burt Kemp started his catering business over 35 years ago in New Orleans Louisiana.  A short time later he started his seasonings and spices business to develop his individual style and flavors for his delicious dishes.  He incorporates his signature blends in the food he loves to prepare.  That flavor starts in the Bayou with seasonings and rubs that bring the taste back to Southern Louisiana. He also creates blends that are inspired by other cultures, including the Caribbean, Mexico, Central and South America.  He always makes these seasonings in small batches, hand blending the spices to ensure the best quality and flavor.
